Orange Loaf

I've wanted to bake last month but I was busy with a lot of things and I couldn't find time buying the ingredients. I'm frustrated because I been reading a lot of baking recipes and I love to try it. Then, I woke up today on the right side of the bed. My mood is OK and after consulting hubby (Yes we do that) I decided to do a bit of grocery shopping and went straight to my parent's house to bake Orange Loaf. The original recipe was Orange Poppy Seed Loaf that came from Yummy Magazine November 2007 issue.



2 1/4 cups cake flour
2 teaspoons baking powder
1 teaspoon baking soda
pinch of salt
1 cup fresh milk
2 teaspoons vinegar
1/2 cup plus 2 tablespoons sugar
grated zest of half an orange
1/2 cup butter
1 teaspoon orange extract
2 eggs

Preheat oven to 350˚F. Grease and line a 9- by 5-inch loaf pan. Set aside. In a bowl, sift together cake flour, baking powder, baking soda, and salt. Set aside. In another bowl, combine the milk and vinegar. Stir well. Set aside for 5 to 10 minutes. Using your fingers, rub orange zest into the sugar to extract more flavor.

Using a mixer, beat the butter and the rubbed sugar until the color lightens. Add the orange extract. Add the eggs one at a time, beating well after each addition. Add the dry ingredients alternately with the sour milk, starting and ending with the dry ingredients. Pour the mixture into the prepared pan and spread evenly. Bake for 45 to 50 minutes or until done. Transfer to a cake rack and cool completely.

Notes:
  • Original recipe does include Poppy seed, Confectioner's sugar, orange liqueur and stripped orange peel. Nearby grocery store didn't have it so I left it out. 
  • The ingredients I bought can make 3 loaves. I baked 2 loaves and left the other one to my parents. They love it and my mom thought I bought it. :) 
  • I did the zesting right and the taste of the loaf is divine! 
  • I greased the loaf pan incorrectly. It produced several holes in front and back of the loaf after I bake it. I forgot the last step on how to line and grease the pan.
