Sausage and Eggplant Stir-Fry

I've shared before that I'm not a morning person. I literally drag my self out of our bed and the idea of chopping my fingers while doing a quick prep half asleep, is not what I envision to start my day. Breakfast/brunch should be easy and quick to prepare. Most of the ingredients can be found in a regular pantry and because wet market is just a few steps away from our home, I bought the sausage fresh or if I still have leftover homemade sausage I usually use that. You can also use baguio beans instead of eggplant. 

Sausage, cut into strips
4 medium eggplants, cut into strips
1 medium onion, diced
2 medium bell pepper, cut into strips
sesame seeds
1 tsp sesame oil
salt, sugar and pepper to taste

Rinse eggplants and cut into strips. Heat oil in a skillet and fry eggplants pieces until soft and golden brown. Drain on paper towels. Set aside. In the same pan, sauté onion then add bell peppers. Add sausage. Cook for 6 to 8 minutes or until sausage are cooked. Season with salt, sugar and pepper then sprinkle sesame seeds and sesame oil. Cook for another minute. Serve immediately.
