Leftover Pinoy Longganisa Pasta

I must admit, I'm a sucker for Longganisa and if ever we have leftovers, I immediately set aside a few pieces for a pasta recipe. My love for it rooted way way back when I was still in elementary school. My parents used to make them and I was able to make a commission by selling a few kilos to my teachers. Whatever was left were cooked for lunch or dinner. I never got tired of it and when I went to high school, I have it once a week. I learn that it tastes good when you dip it in garlic-vinegar dipping sauce and the oil in which the longganisa was cooked were good as topping on the rice. Longganisa became one of my ultimate comfort food. 

Ingredients:
Leftover Longganisa
Pamplona Sausage
Dried Shrimp
Spaghettini
Tomatoes
Bell Pepper
Olive oil
Garlic
White Onion
Salt, Sugar and Ground Pepper to taste

Instructions:
Cook pasta according to package direction. Drain. Set aside. Heat oil then sauté garlic and onion for about 1-2 minutes. Add chorizo pamplona, dried shrimp and longganisa. Cook until it changes its color. Add tomato and bell pepper. Cook until tender. Season with pepper, sugar and salt. Cook for another 3 minutes. Serve immediately.
